Oyster Varieties
Origins, flavour and familiar names explained by the Werner family.
Advice from Christian and Andreas Werner. Fish, seafood and personal service from Grömitz.
A name on an oyster crate does not always identify a separate species. It may refer to a growing area, a selection or a producer. Understanding the distinction helps you choose and compare oysters. Christian and Andreas Werner have worked with fish and seafood in Grömitz for many years. Here are the names you will encounter most often.
PACIFIC OR EUROPEAN FLAT OYSTER?
The Pacific oyster has the scientific name Magallana gigas; Crassostrea gigas is also used in trade and older literature. Many oysters from France, Ireland and Sylt belong to this species. Their flavours differ because water, cultivation and maturation shape them. The European flat oyster is Ostrea edulis, a different species traded in much smaller quantities. Belon is an origin name associated with flat oysters from Brittany; it should not be used for every European flat oyster.
UNDERSTANDING FAMILIAR NAMES
Gillardeau refers to a selection and refinement by Maison Gillardeau. Fine de Claire describes oysters refined in French claires. Sylter Royal indicates origin in the Wadden Sea off Sylt; biologically it is a Pacific oyster. Irish oysters can also vary by bay and producer, from salty and mineral to rich and full-bodied. None of these names replaces the information for the actual product offered.
