A good oyster can be enjoyed in several ways. For a first taste, try one plain. A warm grilled oyster makes a savoury starter, while an oyster shot offers something different. These compact recipes are for small gatherings. Use only oysters in good condition, keep them cool until preparation and follow the instructions supplied with the order.

OYSTERS WITH LEMON · SERVES TWO

Ingredients: 6 oysters, 1 lemon and ice for serving.

Method: Prepare a chilled platter. Open the oysters with an oyster knife and hand protection, remove the top shells and any fragments, then place them on ice. Serve lemon wedges separately so everyone can taste an oyster plain first. Add lemon immediately before eating.

OYSTERS KILPATRICK · SERVES TWO

Ingredients: 6 oysters, 3 thin slices of bacon, 1 tbsp Worcestershire sauce, 1 tsp ketchup, a little lemon and coarse salt to support the shells.

Method: Chop and crisp the bacon. Mix Worcestershire sauce and ketchup. Open the oysters, remove shell fragments and set the bottom shells on coarse salt in an ovenproof dish. Add a little sauce and bacon to each oyster. Cook under a preheated hot grill until the topping colours and the oysters are thoroughly cooked. Serve with a little lemon. Exact timing varies with the grill, shell size and starting temperature.

OYSTER SHOTS · MAKES SIX SMALL GLASSES

Ingredients: 6 oysters, 120 ml cold tomato juice, a little lemon juice, hot sauce to taste and parsley.

Method: Chill the glasses. Season the tomato juice with lemon and hot sauce. Open the oysters immediately before serving and remove shell fragments. Put one oyster in each glass, add a little tomato mixture and garnish with parsley. Serve chilled without leaving them standing for long. For people at increased infection risk, a recipe using thoroughly cooked oysters is a better choice.
