SELECTION & SHIPPING
OYSTERS WITH A PROVENANCE.
PLEASURE WITH A STORY.
Some oysters taste crisp and saline, others mild and creamy. Origin, size and maturation shape their character. We choose oysters we would gladly serve ourselves and help you find the right one for your occasion.
Whether for dinner for two, a celebration or a gift, we offer personal advice and carefully chilled delivery. The pleasure begins with the choice.
Selected for special moments.SHAPED BY THE SEA
HOW OYSTERS ARE GROWN.
Every coast has its own character. An oyster carries it in its flavour.
Time, tides and careful husbandry
Cultivation begins with young oysters, known as seed. Depending on the region, they grow in mesh bags on trestles in the tidal zone or in baskets suspended in the water. They filter their food from seawater. As they grow, they are checked, graded by size and moved into larger containers, giving them room to develop.
The sea shapes the flavour
Salinity and the natural food in the water give each growing area its own character. Currents and tides shape the conditions in which oysters grow. Oysters of the same species from two bays can therefore taste different: crisp and saline, mild or gently sweet. Species, season and maturation also play a part. Our tip: compare different origins without garnishes first.

CHRISTIAN & ANDREAS WERNER
THE WERNERS.
A PASSION FOR OYSTERS.
Our family has been connected with fish and fine food in Grömitz for generations. Our grandfather served oysters at the Seefahrtsklause. From these restaurant roots grew our fish business, our own production and later our delivery service through Delishopper.
Christian and Andreas Werner combine experience serving guests with daily work in selection, chilling and shipping. The oyster’s origin and condition matter more to us than a famous name alone.
We know our guests’ questions firsthand: Which oyster should I choose? How do I open it? How should I serve it? We share that experience here.
UNDERSTAND OYSTERS. ENJOY OYSTERS.
A good oyster needs little ceremony. Freshness, careful selection and proper handling make the difference.
OPEN
Use a suitable oyster knife and protective glove. Hold the shell firmly, open it carefully and remove fragments.
SERVE
Serve freshly opened and well chilled on ice. Lemon, pepper or a fine vinaigrette is enough.
ENJOY
Taste one plain first to appreciate its salt, minerality and the character of its origin.

WHICH KINDS OF OYSTER ARE THERE?
Oyster names can refer to a species, a place of origin, a growing method or a producer. Your taste and the occasion are the best starting points. Here are the key differences.
Pacific oyster
The cupped Magallana gigas is also traded as Crassostrea gigas Many oysters from France, Ireland and Sylt belong to this species. Texture and salinity vary with growing area and maturation.
European flat oyster
The flatter Ostrea edulis is a different species from the Pacific oyster and is produced in much smaller quantities. Belon is a familiar origin name for flat oysters from Brittany; not every European flat oyster oyster is a Belon.
Gillardeau & Fine de Claire
Gillardeau refers to a selection and refinement by Maison Gillardeau. Fine de Claire describes an oyster refined in French coastal ponds called claires. Both are commercial and quality descriptions, not separate biological species.
Irish Pacific oysters
Atlantic bays and different growing methods give Irish oysters a range of flavours, from crisp and mineral to rich and full-bodied. See each product for its specific origin.
Sylter Royal
Sylter Royal grows in the Wadden Sea off Sylt. It also belongs to the Pacific oyster species. Its origin gives it its name, rather than a distinct species.
Which one suits me?
For a first tasting we often suggest a mild, balanced Pacific oyster. To explore stronger sea flavours, compare different origins side by side. Taste them plain first, then add lemon or vinaigrette.
Our range changes with availability and season. Check the current origins and sizes in the Delishopper online shop.

FRESHNESS & CARE
From shipping to opening
Our family has traded fish and delicacies in Grömitz for generations. We source oysters through the fish trade and suppliers according to availability; we select them carefully and pack them chilled for shipping.
On arrival, follow the temperature and use-by instructions supplied with the order. Keep oysters cool and enjoy them promptly. Shells should be intact. Do not use oysters that remain open when touched or smell unusual.
Use an oyster knife and a protective glove to open them. Carefully remove the upper shell and any fragments, then serve immediately. Raw oysters carry an infection risk even with careful sourcing and chilling. Vulnerable people should avoid eating them raw and cook them thoroughly.

FREQUENT QUESTIONS
OYSTERS EXPLAINED SIMPLY.
Is Belon an oyster species?
No. The European flat oyster is called Ostrea edulis. Belon refers to an oyster associated with a particular French origin.
Are all oysters organic?
No. Organic is a protected designation and requires certification. Growing oysters in the sea does not automatically make them organic.
How can I recognise fresh oysters?
Look for intact shells, follow the shipment instructions and check for a fresh sea smell after opening. If in doubt, do not eat an individual oyster.
How are oysters shipped?
We pack our selection chilled. With an order placed in time, our freshness service may deliver on the next working day. The available shipping options and dates are shown in the online shop.
