Oyster Guide

How to receive, open and serve oysters with care.

Advice from Christian and Andreas Werner. Fish, seafood and personal service from Grömitz.

DE · EN

A carefully selected oyster deserves careful handling. From receipt of the chilled parcel to serving, temperature, tools and attention matter. Always follow the instructions on the packaging and product first, as origin, shelf life and shipping route can vary.

AFTER DELIVERY

Unpack the parcel promptly and follow the supplied cooling and use-by instructions. Keep oysters cool and open them only shortly before eating. Do not use damaged shells. An already open oyster that does not close when touched, or one with an unusual smell, should be discarded. When in doubt, leave that individual oyster uneaten.

OPEN SAFELY

Use an oyster knife and a suitable cut resistant glove or other reliable hand protection. Hold the cupped shell firmly in your protected hand. Insert the knife carefully at the hinge and remove the flat shell without uncontrolled leverage. Remove shell fragments and inspect the oyster before serving.

SERVE PLAIN AND COMPARE

Serve opened oysters well chilled, often on ice. Taste the first oyster without additions to appreciate the salt, texture and flavour of its origin. Lemon, pepper or a light vinaigrette can follow. Our oyster recipes offer ideas for warm preparations.

MAKE AN INFORMED CHOICE ABOUT RAW OYSTERS

Raw oysters may contain pathogens despite careful sourcing, chilling and freshness. Vulnerable people should avoid eating them raw and cook them thoroughly. This is part of honest advice about a natural food product. For questions about your delivery, call Werner Delikatessen on +49 (0) 4562 255667.
